Hotel Villa Padierna is proud to announce its gourmet restaurant, La Veranda, will be reopened on 11th June to introduce worldwide press to its newly appointed award winning chef, Martín Berasategui. The hotel will host the first gastronomical centre run by the chef in Andalucía.

In preparation for the reopening of La Veranda Martín invited his team to immerse themselves in extensive training sessions at the acclaimed San Sebastian restaurant. This has enabled the group to create a selection of signature dishes for Hotel Villa Padierna that will be available to guests visiting the restaurant. Using precious techniques, imaginative ideas and fresh seasonal produce the menu will create a gastronomic fusion of North and South. Amongst others, the menu will offer an attractive selection of sea food, transformed into surprising dishes such as: “ajo blanco” made from pine nuts with blue fish, seasonal mushrooms and herring roe; roast sea bass with chard broth, mustard flavoured “pilpil” (cod) with sesame salad or red mullet with glazed edible scales, rockfish saffron gravy and black olive liquid bonbon. As for meats, new ideas include roast with wild wheat, Idiazábal cheese and cherries, and roast barbecued Sirloin with potato, Iberian bacon and fungi preserve. For dessert, those with a sweet tooth can indulge in the magnificent chocolate Soufflé with caramel, cinnamon and liquid cocoa.

The restaurant can accommodate 65 diners with renowned chef Victor Taborda, who is well known for instigating avant-garde cuisine by the fusion of creativity and tradition, heading up the kitchen and responsible for the day to day management of the restaurant. Victor will work closely with Martín on light and quick cuisine that merges creativity with Basque tradition. Martín is confident in Victor’s ability and says ‘’Víctor Tobarda has been one of the most outstanding pupils to emerge from my kitchens; he is a talented chef with an extraordinary dedication, who is well loved and admired in my home. He is to be my right hand man and trusted deputy at the Hotel Villa Padierna.’’
